To You Charming Gardeners

Save for my spouse’s football games on TV, this Thanksgiving holiday is very quiet here. Our family celebrated together this past weekend because my youngest works in manufacturing at a facility which can’t shut down for holidays. They’re at work now as are millions of others who continue tend to our needs, forfeiting time with friends and family for us.

Thank you to the workforce whose labor has ensured our holiday feasting is amply endowed with this growing season’s finest.

Thank you especially to the undocumented workers who are worried about the incoming administration and what may happen to them and their families. Without these hard-working folks we would have a fraction of the produce and meats on our tables today.

Thank you to our neighbors Canada and Mexico, who likewise are concerned about what is to come, who have ensured our country’s economic growth through trade with the U.S. Some of the produce we’ve eaten this week wasn’t picked in the U.S. but imported from both Canada and Mexico.

It’s not easy to give thanks now. It’s tough to look past the pain of loss and the fear of what’s to come. But there may never be a better time to give thanks than right now, because we don’t know what lies ahead. Let’s do it while we can.

Breathing Room: What’s on Your Holiday Menu?

I can tell from my social media feed that many folks are both restless and preoccupied. I’m sure it’s partly because they’re trying to wrap up work before the Thanksgiving holiday, partly because some folks are already traveling, and partly because some folks are already working on holiday preparations.

I’m among the last group. I’m not having turkey at home on Thursday in observance of the day with family; it’s going to be just us empty nesters and whatever large piece of beef or venison is occupying too much room in the freezer.

This will be the first year one of my kids hosts the holiday feast, though. We’ll be celebrating on Saturday because my youngest must work on Thursday but has Saturday off.

I’m reminded of my childhood holidays which were frequently shifted around because my mother was a nurse and always worked at least one holiday. Babies don’t stop arriving, heart attacks still occur, accidents still happen, no matter the day of the year. Health care professionals still show up to serve those who need care regardless of holiday observations. Thanks to all of you in health care and other first responders who will be on the job tomorrow.

Some manufacturing industries also have no time off; they run 7/24/365 and somebody needs to be on the job to keep production running, to keep systems in a stable safe mode. Chemical and pharmaceutical plants are just a couple examples; they often can’t shut down production altogether, or they can reduce operations but still must keep machines in a steady state because it’s more challenging to bring a system back up from a down state. This may be in part because of profitability, but it’s often about safety. Thanks to all the folks who will continue to work through Thursday for these industries.

Ditto for the shipping industry – ships don’t stop dead in the ocean, trains don’t stop on the tracks, trucks may pause at rest stops but they still keep their schedules. Again, profitability may drive some of this, but safety and security are also reasons why shipping continues. Thanks to all who will continue to work tomorrow to keep things running smoothly on Friday and beyond.

So while my youngest works tomorrow in one of these can’t-stop industries, I’ll be working on cooking and baking foods for the delayed feast on Saturday.

This year I’ll be spatchcocking a fresh turkey. This has caused no small amount of amusement in the family group chat. But spatchcocking – or butterflying, if you want to avoid the time suck the other word may set in motion in your conversations with friends and family – is the fastest way I know to roast a whole turkey.

It’s also a good approach if you discover the frozen bird you bought hasn’t yet fully thawed, but you’re going to have to do some surgery with a mallet and cleaver rather than kitchen shears and a knife. Ask me how I know this…

My eldest who is hosting the feast on Saturday will be occupied until noon; this is the primary constraint dictating spatchcocking the bird. We can’t get the bird in the oven before 12:30 p.m. and their older half-brother will be bringing little ones who need to eat earlier than later. Which means I have about 2-3 hours to cook a 13-pound bird.

I’m going to remove the bird’s backbone on Friday evening along with the breast bone and cartilage, then brine it overnight. I’ll just leave it in the brine bucket while we travel, then slap it on parchment in the bottom of a broiler pan while the oven preheats after noon Saturday.

The host is fixing mashed potatoes and green beans along with a cherry pie. My youngest has been assigned pumpkin pie duty because it’s both their favorite and their most frequently made dessert.

I’ll handle squash rolls, sweet potatoes, homemade cranberry sauce, and a crudites platter. Nothing super fancy, relatively safe territory since there will be children present.

There’s a couple bottles of homemade hard cider my youngest made and left in my wine cellar; I’ll probably take those along with a Riesling and a moscato to enjoy with the turkey and dessert.

In all the preparation for the holiday, let’s not forget that tomorrow’s holiday arose from colonists celebrating survival of their first year in the new world. They arrived on already-occupied lands, contributing to the eventual dispossession, deaths, and erasure of indigenous peoples, their nations and cultures.

Descendants of colonists continue to erase indigenous peoples with book bans and suppression of culture, preventing education about Native Americans as part of this country’s history.

It should be no surprise that Thanksgiving Day is marked at Plymouth Rock as a day of mourning by the heirs of dispossession and erasure.

For some of us this is intensely personal and not merely an interesting factoid one can drive by, even for those of us who walk in both indigenous and colonialist worlds.

Turkey in Limerick

In Eire you can now find a turkey

I don’t think I’m much better at the Limerick than I was when I tried one last Christmas!

Spouse and I have invited his cousins for an American-style Thanksgiving dinner, but since today is not a holiday, we’re going to host on Saturday. This will be our first dinner party post lockdown and the first big dinner in our new kitchen. And no, the painting is not quite done but it’ll have to work.

I wasn’t kidding about the sides: As I noted in Rayne’s thread, I’m going to make my latest Turkey Day innovation: Kung Pao Rutabega. I love the vegetable but during lockdown I wanted to do something other than another mashed root vegetable. So I tried this. Not only does the rutabega really complement the Szechuan flavors, but the nuttiness of it adds something as well.

Rutabegas here, by the way — Swedes, they’re called — are positively enormous. I cycle to the market so always have to pick the smallest one to fit in my bike pannier.

The one other trick of my first big Turkey Day with family here in Ireland is that the farmer from whom I’m getting the turkey is geared towards Christmas, not Thanksgiving. So when I passed by his stall the other day, he warned me that he won’t be around to pass off the turkey. He’ll be in Spain. He assures me the lady with the stall across the way will bring it for me.

Update: The turkey worked out without a hitch. Our farmer had a friend who gave the turkey to the baker who brought it to market, ah sure.

If you followed my debate about sides, we had mashed spuds (they’re gone, I had none), two stuffings, brussel sprouts, a lovely arugula, fennel, walnut, and dried cranberry salad, and the kung pao rutabega (Swedes). The latter was reasonably well received; the 17-yo had seconds.

It’s going to be just me and my spouse here empty nesting a holiday for the first time in forever. My youngest has to work because Big Pharma production lines run 7/24/365; my oldest is spending the holiday with her partner’s family (we get Christmas). We’ll have our big turkey feast on Saturday when my youngest finally gets a day off.

But I’m going to make my squash rolls today so that we have them for the tiny pork roast hubs and I will have tomorrow in lieu of turkey. These are what I bring to all the family gatherings — they’re my signature baked good. This batch will be made with puree from a hybrid squash, a cross between a kabocha and a Hubbard. The flesh was very dense and sweet, deep orange. I’ve already made one batch with this particular squash. The dough was almost too moist so I’ll cut back a bit this time on water. The dough made excellent cinnamon rolls: tender, not too sweet.

Give these a whirl if you have pumpkin or squash on hand.

Squash or Pumpkin Cloverleaf Rolls
Makes 16 cloverleaf dinner rolls

INGREDIENTS:

1 cup squash or pumpkin puree

1/2 cup water
1/2 cup milk
1/3 cup butter, melted

4-1/2 cups unbleached all-purpose flour
3 tablespoons light or dark brown sugar
2 teaspoons salt

grated zest of 2 orange (optional)

2-1/2 teaspoons SAF yeast or 2-3/4 teaspoons bread machine yeast

DIRECTIONS:

Put all ingredients in bread machine according to manufacturer’s recommendations (or mix by hand, blending all ingredients except for flour first, then blend in flour).

Set machine to dough setting (or knead by hand until dough is smooth and elastic – about 7 minutes total between mixing and kneading. If making by hand without machine, allow dough to rest and rise in a greased bowl in a warm place loosely covered for 60-90 minutes until dough has doubled in volume).

Grease 16 standard muffin cups.

When machine indicates dough cycle is complete, remove dough onto a lightly-floured work surface.
Divide into 4 equal portions.
Divide each of those into 4 equal portions.
Divide each of the 16 portions into 3 equal portions and roll into small balls the size of a walnut.
WORK FAST – dough may rise rapidly as you work.

Arrange 3 balls of dough into each of the muffin cups.
Cover with plastic wrap and allow to rise until doubled in bulk, about 30 minutes.

Preheat oven to 375F.

Bake for 15-18 minutes or until golden brown.
Remove from pans and allow to cool on racks.

Brush tops with melted butter if desired.

CTDT: Critical Turkey Day Theory

I’m once again up to my elbows in another Thanksgiving turkey, preparing  the annual feast. My two adult children are home to observe this holiday, bringing with them a new challenge: four dogs.

I swear this is payback for not letting them have pets when they were younger.

My canine guests range in size from a dainty 30 to a hefty 90 pounds and exhibit varying degrees of nervousness. Two of them are here because my eldest is dogsitting.

And one of these dogs suffers from ADD as does their owner.

I really need more than a continuous stream of alcohol to get through this day.

But I wouldn’t have it any other way. We are all of us healthy, we’ve all been vaccinated and don’t need to wear masks or to ventilate the house. Three of us have had our boosters with the remainder to get theirs very soon.

Last Thanksgiving we looked for places to have an outdoor picnic in the cold halfway between my place and my kids’ places, because we didn’t want to risk being cooped up inside not knowing if any one of us had been exposed to COVID.

This holiday is better; we are living far more freely than last year.

For this we give our thanks.

Putting aside the pandemic, the complexion of this holiday has changed since I was in grade school back in the 1960s. The happy little turkeys we made from construction paper and hand prints are the only thing which might yet make sense now that the truth has stripped away the hoo-ha make-believe surrounding the mythic first Thanksgiving and the Mayflower’s Pilgrims of Plymouth.

We know now that the decimation of the indigenous people who were here long before the Mayflower arrived had already begun because of exposure to diseases brought by British fishermen; they’d also attempted to enslave members of tribes as they fished the east coast.

The epidemics which came with the whites killed nearly 90%% of native people who had no resistance to the Europeans’ diseases, leaving behind smaller numbers of tribal members who could not fend off violence by settlers after what we’ve been taught was the first Thanksgiving.

This holiday has been a fallacious celebration of peace and harmony between immigrant whites and the native peoples; in truth it marks the beginning of massive genocide. What we were taught as children was that this land was nearly virgin, ready for the taking, when in fact it had been populated by millions belonging to many nations but cleared by disease and the savagery of Christianity’s “soldiers” who claimed dominion here as part of their god’s promise to them.

The eventual American colonies were born of disease and deaths of the previous occupants of land that wasn’t truly up for grabs.

Decolonizing this holiday requires seeing this truth beneath the happy little cut-out turkeys and remembering what has been sacrificed and lost before this day.

Walking a foot in both worlds — a descendent of European settlers on one side of the family and a member of a vanquished indigenous people nearly wiped out by disease and whites’ oppression — can be a bit challenging.

The in-laws who are all of European descent do not want to hear the truth, that they live on what is occupied land hornswoggled one way or another from Native Americans. “Oh, but there were treaties, this is ceded land,” they’ll argue. How quaint — as if the remaining 10% of the people who once lived here had the power to confront and force off settlers who came bearing even more disease and firearms.

The truth is bitten back, just as it must have been hundreds of years ago when indigenous Wampanoag first met the Pilgrims, stressed and needy after their long voyage as they attempted to settle into their new home on others’ land.

It’s a tradition which is changing, but not all at once. Many other uncomfortable truths will still be held back this day; we ignore the in-law who’s a pig-ignorant anti-vaxxer, and the other who’s an unrelenting gullible Trumpist who eats up all bat shit garbage they are fed by Facebook. There’s no reasoning with them.

In spite of them we make an effort to depart from a white-centric observation; this day will be spent celebrating the health and companionship of those who survived the last year because they cared for their fellow humans and themselves, thinking of the generosity of the Wampanoag back in 1621.

We’ll remember genocide both passive and active took a vast wealth of humans who lived on this soil, entire nations and their ways gone with them.

We’ll support Native American by choosing an indigenous-owned business or Native American artist when we shop for holiday gifts, or make a donation to support Native American news outlets.

We’ll talk about the nations on whose lands we live (do you know whose land you’re on?), and discuss the foods which would have been eaten by these same nations.

There’s more we can do but this is a start toward decentering the white settlers in American history and recognizing the history of this country hasn’t been as glossy and perky as packaged by those uncomfortable with the truth.

The observation of thanksgiving as an autumnal or harvest festival was hit or miss and highly local in this country’s early years. It was formalized as a national holiday after Sarah J. Hale lobbied then-President Lincoln for a “day of our annual Thanksgiving made a National and fixed Union Festival.”

Lincoln consented and issued this proclamation:

The year that is drawing towards its close, has been filled with the blessings of fruitful fields and healthful skies. To these bounties, which are so constantly enjoyed that we are prone to forget the source from which they come, others have been added, which are of so extraordinary a nature, that they cannot fail to penetrate and soften even the heart which is habitually insensible to the ever watchful providence of Almighty God.
